I posted awhile back about taking on perhaps a bit too much “DIY” for my friend’s baby shower. I decided that each person should have a knitted monster to take home with them. Luckily I had help getting them done!

Apple, Onion & Gruyere Tartlets
1 Basic Pie Crust Recipe (or frozen store bought crust)
1 Yellow Onion, small dice
1 Granny Smith Apple, small dice
2 Garlic Cloves, minced
1 T Butter
1 t Lemon Juice
2 T Flat Leaf Parsley, minced
1/4 Cup Gruyere Cheese, Grated
1 T Honey
Salt & Pepper to taste
Preheat oven to 400. Cut pie crust in circles and press into mini muffin tin. Poke holes in the dough with a fork. Bake 12-15 minutes until golden.
Melt butter over medium heat. Add onion and a pinch of salt and saute until translucent, approximately 10 minutes. Add apple and garlic and saute 10 more minutes until apples are tender. Add lemon juice, parsley, honey and salt & pepper to taste. Filling and mini crusts can be made a day ahead.
Fill mini pie crusts with apple onion filling and top with grated Gruyere cheese. Warm in 400 oven for 10 minutes just before serving.
